Islands are the protagonists of the first week of the Bio-Mediterranean cluster. Today’s schedule is entirely dedicated to the Egadi islands where the culture of tuna and tuna fishing will enable visitors to discover the glorious past of islands which owe their fortune to the fishing tradition and the transformation of tuna. Among appointments is a show cooking event with chefs Roberto Canino and Michele Ritunno who will prepare tuna in different versions and in the afternoon an event dedicated to the Firriato firm which has reintroduced vines on the island of Favignana after 100 years of absence.
Yesterday was Pantelleria’s turn with Sicilian chef Peppe Giuffré and producer Giulia Pazienza from the company ”Costa Ghirlanda” who spoke about the authenticity of the ”black island”.
At the center of the debate the themes of biodiversity, landscapes and sustainability: from gobelet vineyards that have become part of the Unesco heritage in November 2014 to Arab gardens full of oranges. The protagonists of this scenario were vineyards, capers, muscat grapes, the passito and other wines of Pantelleria, from heroic viticulture in difficult terrain but rich in sapidity brought by the winds, minerals that come from volcanos and the ability of those who were able to grow them.
The show cooking events were entrusted to local chefs Michele Liuzza and Gian Claudio Malta who prepared two typical dishes from the island’s tradition made exclusively with local products: from the ‘busiate’ with a local pesto and capers sauce to the ‘kisses of Pantelleria’, a local cake made from ricotta cheese.
